Beer Ice Lollys and how to make them
If you love beer and you love ice lollies (popsicles for our American friends) then why not combine the two.
Its simple and easy and workS with most beers and ciders up to about 6% ABV.
The bitters in the beer really become overpowering when beer is frozen so you need to counteract that with some sugar.
Pale Ales and ciders seem to work best.
Use 4-6 teaspoons of sugar for a 500ml bottle. Add more if you fancy.
These take about 4-8 hours to freeze properly depending on the amount of alcohol.
Any more than 6% and you just get a slushy even at -18°C

How to pour a bottle conditioned beer so you get a crystal clear glass of beer
Просмотров 26521 день назад
To get a fizzy bottle of beer, lager or cider when home brewing, the easiest way is to bottle with some sugar so you get a secondary fermentation in the bottle. The trapped CO2 is dissolved into the beer and this makes it fizzy. This causes some sediment in the bottom of the bottle. To pour the beer so you get a nice clear pint is very easy, you just have to be willing to sacrifice a small amou...

When I'm making a fruit wine such as plum and blackberry or even fig, I throw in a good heap of Rhubarb which adds some acidic sharpness to the final wine. It also seems to keep the PH level to just what I need for a happy and lively fermentaion. Cheers!

    "If you keep chocolate in the fridge.... there's something wrong with you." 😂😂 Agree!! 💯 Btw, I had to make this as soon as possible after I'd seen your initial video and I sure did! For some reason, this was an unusually long fermentation for me - it took 19 days precisely but it went fully dry - 0.990. I've racked it twice - this past weekend was the second time after 3 weeks in a glass demijohn. It's got this beautiful amber color, very similar to yours, kinda like orange wine...and I mean white grapes fermented on skins, not the actual wine from orange fruit. Most surprisingly, it's actually clearing up incredibly well on its own, I haven't added any finings yet, and I might not do it at all. I can't wait to try it, but I think I'll leave it to clear and bulk age for another couple of months, before I bottle. Anyhow, thank you so much for this recipe...I honestly can't remember the last time I've been this excited to brew something!! Cheers! 🥂

    • @Brewbitz
      @Brewbitz 3 дня назад

      Cheers. Glad it inspired you. A little tip for you, Once youve taken it off the yeast and leaving it to clear naturally, dont keep racking it. Just let it clear and let the sediment form a cement at the bottom. Hope yours tastes as good as ours.

      @alexlarsen6413 3 дня назад

      @@Brewbitz I hope so too! Yeah, I won't...I don't rack it more than twice usually. Mind you, the first racking was from the brew bucket to a glass demijohn and the second one about 3 weeks later was just racking it off of the gross lees. Now I won't touch it until it's ready to bottle.

    This video is wonderful! If you don't mind, I have a few questions for you: 1. How long was your secondary fermentation? 2. What is this process called when you leave your wine in the corked bottle for months/years? Is this aging? Is there a "too long" to this process? 3. Do I have to use a corked bottle, or can I use a swing top? If I use a swing top bottle, will my wine go bad? 4. After you uncork your wine, how long does it usually last? I know this is sort of long and I appreciate you taking the time to read it. Thank you!

    • @Brewbitz
      @Brewbitz 6 дней назад

      Hi. 1 - There is no secondary fermentation with this method. It gets moved from the initial fermenter to a secondary fermenter. This is not a secondary fermentation. Just a secondary vessel. The time in the second vessel s usually about 2-6 weeks to allow the fermentation to complete. Testing with a hydrometer is needed to check if the fermentation is complete. 2 - ageing a wine is once it has finished fermenting. Depending on the wine made will depend on how it ages. White wines will normally be good for up to 5 years. Reds 5-10 years. 3 - you can use either cork or swing top bottles. Both are fine. 4 - once opened, as with all wines, it will last a few days if kept in the fridge. It will become infected by airborne bacteria that will turn the wine to vinegar. Hope this helps.

      @Brewbitz 8 дней назад

      Hi. If it looked a bit like a crumpet, with little holes in it, its normal. Thats co2 bubbles popping as the pressure of the cider above reduces, it means the co2 bubbles can rise out of the sediment. I think it looks pretty cool.

    • @Brewbitz

      It could be the raisins, or it could be the stewed tea. You’ll sometimes find that 2 fermentations with exactly the same ingredients can look different. Perhaps stew the tea a little less next time or use less teabags. Just remember to make a brewing diary and add your tasting notes to your recipe so you can make tweaks the next time you make it.

Meanwhile, I've been collecting more blackberries and I have enough to make 6 gallons. I've bought extra bottles for this upcoming recipe. The only real difference is the fining agent I use: it's bentonite clay. I don't really know how well it works in comparison to other varieties, perhaps you can advise me on that. You want some carbonates in your water. Tap water in the uk ranges from a pH of 6.5-9.5 so mainly alkaline. Here in parts of the UK the water has too much carbonates, so acid is added to reduce them and therefore raise the pH but it is usually still in the pH range 6-8 See our AMS product as we have charts on here showing the ideal ranges for each beer style - www.brewbitz.com/products/ams-water-liquor-treatment-for-brewing-beer-500ml-harris

    Always wait 12 to 24 hours after adding the Pectolase, before adding the yeast. Also loosely fit the bucket lid rather than fastening it down tightly. No need to degas by shaking or using a drill, it will happen naturally if left in a cool place. The same method will let the wine clear without additives.

    • @Brewbitz
      @Brewbitz 29 дней назад

      Hi will. Thanks for the comment. Just to help, adding pectolase can be done at any point, even post fermentation. If you are making a fruit wine, then its usually good practice to leave the fruit with pectolase for 24 hours for it to break down the cell walls, but not so needed with cocoa powder. As we are not leaving this in the demijohn to naturally clear, it needs to be degassed or it can prevent the finings working as efficiently. It also helps the potassium sorbate kill the remaining yeast. This wine is best served young, 3-6 months old, so degassing is recommended. Hope this helps.
